Here is a great soup for the slow cooker. Not sure how kid friendly it is. You will have to let me know. My 3 year old won't touch it.
(I use ground turkey instead of beef.)
This is one of my favorites to make in the winter.
Chicken Tortilla Soup
1 Large onion chopped
1 cup cubed chicken breast
2 cups frozen corn(or 2 cans-drained)
2 garlic cloves, pressed
2 ( 14.5 oz) cans chicken broth
1 ( 10 3/4 oz) can tomato puree
1 (10 oz) can diced tomatoes with green chilies
1/4 cup salsa ( optional)
1 can black beans rinsed and drained)
1 can refried beans ( add at end to thicken soup and add protein)
1 tsp salt
2 tsp ground cumin
1 tsp chili powder
1/8 tsp ground red pepper
1/8 tsp black pepper
1 bay leaf
Cook on high for 6 hours
discard bay leaf before serving.
Garnish with shredded cheese, cilantro, sour cream, and tortilla strips.
Tortilla strips-
cut four tortillas in thin strips and bake at 375 for 5 min. stir and bake 5 more min or until crisp.
That should read flour tortilla into strips not four tortillas, otherwise you will end up with a gazillion tortilla strips......
This is my favorite crockpot recipe so far, and it's very easy and delicious!
French Dip Sandwiches:
4lb rump roast (trim excess fat)
1 (10.5 oz) can reduced sodium beef broth (or regular)
1 (10.5 oz) can condensed French onion soup
1 (12 fluid oz) can or bottle beer
6 French rolls (white or wheat)
2 TB butter (optional)
6 slices provolone or mozzarella cheese (optional)
Place roast in slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 8 hrs. Toast bread with butter in 350deg. oven if desired about 10 min. Slice meat (or pull apart--very tender!) and place on the rolls with cheese. Serve the sauce for dipping. Very good with steamed vegetables and side salad.
Aacck! You beat me to it. Anyhoo- great resource with a ton of recipes! We did the chicken and black bean soup last week and it was awesome.
Here is a mexi dip that is always a hit-
2 blocks cream cheese
1/2 large block of velveeta
1 block of frozen spinach thawed
2 cans of rotel
I stole this one from Emily but since she hasn't posted yet I am going to take credit. :)
This is really good served with Beer Bread. Also, I realize it calls for cooked grond beef which can sometimes defeat your crock pot purpose. However, if you are browning ground beef for another meal, brown twice the amount & freeze 1/2 for this recipe when you want it.
Ranch Chili
1 pound cooked ground beef
2 cans of minestrone soup (or vegetable)
1 can of Rotel
2 cans of Ranch Beans
Stir in pot or crockpot until heated through.
I've made the mexi dip Kim posted and it rocks!!
Golden Pork Chops
4-5 chops
2-3 cans Campbells Golden Mushroom soup
clove of chopped garlic
chopped fresh mushrooms
salt
pepper
Rinse chops, and season with salt & pepper. Place in crock pot. Mix together soup, garlic, and mushrooms and pour over pork chops. Cook on low for 7 hours, or high for 4 hours.
I usually serve with brown rice, pouring the sauce over the rice.
My measurements are never exact, I eyeball alot of things!!! Tweak as you like!
Chicken Stroganoff
3-4 frozen chicken breasts
1 can cream of mushroom soup
1 TBSP soy sauce
8 oz sliced mushrooms
Cook on low for about 6 hours or until chicken is falling apart. I just use a wooden spoon to chop up the chicken as it cooks. 1/2 hour before serving put 16 oz of sour cream in and continue to cook on low. Serve over rice or noodles. My kiddos will eat this meal.
Simple Italian Chicken
You can put it in a pita or wrap or serve by itself.
Our favorite is in a wrap with cheese, broccoli, and italian dressing.

1 package Good Seasons dry Italian dressing mix
cook on low for about 6 or so hours until chicken falls apart.
Italian Beef
3-4 1b. rump or arm roast
1 package good seasons italian dressing mix (dry)
1 package dry onion soup mix
2-3 cups of water
cook on low for 6 or so hours until the meeat falls apart.
We usually serve this meat on a bun with cheese (provolone)
I made the Ranch Chili last night and it was great!!
