Simple Summer Salad Recipe

Here is a great summer salad recipe - that's healthy too. It was made recently at the May meeting. You could even add grilled chicken and it can be your entire dinner!

Spinach Salad (Celeste Steffens)

Clean, dry spinach leaves (or baby spinach leaves, which I prefer)
Red onion—(*optional, diced very small)
Crumbled feta cheese
Cherry tomatoes, cut in half
Crushed walnuts
Dried cherries, cut in half (or you can use any kind of fruit you like, such as mandarin oranges)
Light Italian Dressing
Balsamic Vinaigrette

Mix first 6 ingredients together in a large bowl. In a separate bowl, combine light Italian dressing and balsamic vinaigrette (I use about 2 parts Italian dressing to 1 part balsamic vinaigrette). Wait to add the combined dressing until right before you serve the salad, then stir it in. A little dressing goes a long way so be careful not to overdo it. Enjoy!

Summer Reading Program Kick-off

This is a great reading program - your kids get to pick out a free new book in August! Your kids don't have to know how to read - you read to them and it counts! My kids have done it several years now and I enjoy it just as much as the kids.

All young readers (going into 5th grade and younger) are invited to pick up a summer reading folder at the library beginning Saturday, May 22. We will continue to distribute folders throughout the summer. Folders will also be available at our Summer Reading Kick-Off on May 22 at Frontier Park. Use the folder to keep track of all your summer reading. Collect colorful stickers for your folder each week at the library. Bring your folder back between August 2 - 22 to receive a free paperback book!

Catechesis of the Good Sheperd

This past year I assisted in the Catechesis of the Good Sheperd classes since both of my children were in the class. I learned so much and am interested in learning more so I can be certified to teach. The classes will be starting soon and are located in Lenexa. I have been told the course is not offered that often and usually the classes are held in other locations. So now is the time to sign up! Registration deadline is June 4th.

"Focusing on God’s unconditional love through the parable of the Good Shepherd, the Level 1 course is based on the conviction that God and the child are in relationship. It is the foundation-level training for the catechesis in general and for the 3- to 6-year-old child in particular.

This course will give you the background formation as well as the skills to create a prepared environment, or atrium, and make presentations that enable the child to draw near to God."

CLASS SCHEDULE - at Holy Trinity in Lenexa

Formation sessions are offered on one long weekend of four days (June 12-15) and three additional Saturdays during the year (Nov. 6, 2010, March 5 and April 30, 2011) from 9 a.m. to 4:30 p.m.

Honor Mother Teresa

The Empire State building frequently colors theirs lights at night to honor various events or people. A group asked them to change their lights to blue and white to honor Mother Teresa's 100th bday on August 26. The Empire State Building rejected their request. But last year, they lit up their building to honor the Communist Revolution in China (even though that event involved the killing of millions of innocent people). They probably rejected it because they are being PC. So here is a petition I saw that you can sign to ask them to change their mind.

Please sign this petition. The Empire State Building won't honor Mother Teresa.
